I opted to make this a Saturday night after dinner affair. Having saved room for dessert, I was anxious to try the Souffle du Jour, an exotic fruit concoction with a luscious strawberry anglaise poured tableside into the piping hot center. It didn’t disappoint, but with so many creative choices: roasted lavender strawberries with crème fraiche, risotto pudding with brandied figs, vanilla creme brulee, there’s something decadent for every night of the week!

Their seven tasting flights vary in price from $10-$19 and consist of three full glasses from three different houses. I chose two: The “Champagne Bubbles,” that included a knock-your-socks-off $200 Gosset Brut Excellence and their “California Bubbles,” which definitely held its own against the “real thing.” Our personal sommelier, never lacking to impress, brought over a complimentary sample of the ever-popular Veuve Clicquot when I inquired about how it would taste when sampled next to the Gosset. My wish: his command.
From small plates to the perfect nightcap, POP will tantalize your senses and leave you feeling somehow smarter (it’s “Voov clee ko”). My obsession with Champagne Bars has officially begun. Not planning a trip to Pasadena? Champagne Bars are located all over the world including, Flute (NYC & Paris), Pops For Champagne (Chicago) or Champagne Bar at the Liberty Hotel (Boston).
